Here are pics of limbat with hainanese rice and tempeh sambal. The main star here is limbat. Limbat is a fish that looks like lele. As far as I know it’s popular in my dad’s hometown, Padang Sidempuan, North Sumatra. You might’ve guessed, the black appearance is because it was smoked. It tastes really smoky, yet it’s so savory and crispy. Be careful eating them though, or some of not-so crispy bones are going to hurt your gums, regardless, it’s a really enjoyable side dish to eat with some rice, and sambal. Sometimes adding them into your gulai would enrich the gulai with some smokiness.
