Urap will always remind me of Indonesia. I mean, wherever you are in this archipelago -hell, maybe all along the tropics- you could always make this dish. Equipped yourself with local greens knowledge, go out, forage, and make this dish with the ever-present coconut. You can mix the shredded coconut with spices, fry it, steam it, however you like it. So don’t be sad if you couldn’t get your hands on that fancy imported kale, or cute baby spinach, or that glossy lettuce. We’re in the tropics, the capital of biodiversity, embrace it. There are lots of unutilised wild greens in this wonderful world of tropics waiting for creative hands to turn them into a delicacy. Urap is just one of those. I made this in Salatiga, Central Java, but basically as stated above, you can make it anywhere.
